Delicious & Healthy Apple Oat Muffins

A few friends asked me for this recipe, so I thought I would share it with you as well. The best thing about these muffins is that not only do they taste wonderful, but they also have no added sugar or fat. Bonus!

Delicious & Healthy Apple Oat Muffins

2 small apples (or 1 medium), cored and grated.
1 egg (or 2 egg whites if you want less fat).
1 cup of skim milk.
2 cups of rolled oats.
1 cup of wholewheat flour.
½ cup of raisins.
¼ cup of honey.
1 teaspoon of vanilla.
1 ½ teaspoons of baking powder.
1 ½ teaspoons of cinnamon.
½ teaspoon of salt.

Preparation Instructions:

Spray a muffin pan with non-stick cooking spray.

In a large mixing bowl, stir together the milk, vanilla, eggs, and honey.

In a separate bowl, blend the oats, wholewheat flour, baking powder, cinnamon and salt.

Blend the two mixtures together.

Add the raisins. Fold in the grated apple.

Fill the muffin cups to almost full.

Bake 350°F (175°C) for about 20-25 minutes.

Cool the muffins in a pan for about 10 minutes for to allow for easier removing.

Eat quickly otherwise you might not get any!
